75 Day Challenge - Day 1 Check In

It is kind of hard to blog in current time, so this captures yesterday's activities but the photo and weigh in is from today. I am sure that is totally ok. LOL.

Day one is off to a great start. The 75 day challenge motivation for me is to really set my routines. I have a habit of getting a great idea and not following through long term. That needs to change. I have been working hard to get to this moment. It is kind of weird to say but it feels like one day a light bulb went off and it was time to get moving. I feel like I have been stagnant for so long, that finding my way out has been a task in itself. It's amazing how energized one can feel after tackling a few pending projects. I tell you, my closet room was the looming disaster for a very long time. Now that I have the room functionally organized, i feel like I am functionally organized too which is why i thought this was the perfect time to try the challenge again. The next step in my self care and care.

I am slowly getting back to journaling in the morning and today was such a positive entry. I've mentioned before that I am pretty spiritual and I always had the practice of journaling to my oracle cards. I find that it centers me, makes me think and provides me the opportunity self reflect on so much. Well, its been months upon months of not following that practice. Mainly because my cards were in my little house and I kept forgetting to grab them. But, I also have to believe I wasn't ready yet. These things have a way of laying their own path. Let the universe lead the way.

We all have ideas on how we want our days/lives to flow. The things that make us feel fulfilled as an individual. I am slowly learning to create my boundaries which is helping shape the life I always wanted. Sure, i am currently living the best life, but there are always improvements to be made. I have found, that really sticking to my agenda book, checking off task after task, works so well for me. It's helping me keep organized, but also way more productive. It sounds silly, but I have really found a good flow since I work from home. Trying to keep my days busy so I don't sit on the couch like a bum has been a work in progress. The last few weeks I have really started to feel accomplished, less overwhelmed and more at peace with myself.

The hard motivation is going to keep me on track to help change my daily habits.

75 Hard Meal Plan:

I like to meal prep, having options in the fridge, ready to go. If I don't, I get side tracked quickly and have two major issues. Number 1: Uber eats is just a click away with everything arriving in like 20 minutes. That seems way better than cooking, making a mess and then having to clean it all up. LOL The second issue is that when you eat sweets, you want more and more sweets, and dark chocolate is my kryptonite. Spencer purchased us Lindt chocolate advent calendars for Christmas, but I didn't start eating the chocolate until January. I became addicted. It is so dang tasty, omg! However, in that light bulb moment I mentioned above, I realized I had to flip that internal switch, having a get serious talk with myself, and step away from the chocolate ... and the ice cream and the chocolate cake!

As you can see, it's just best to meal prep, which is why the factor meals is going to make an incredible impact. That starts on Monday, so we aren't too far away. Anyway, I created my menu for the week last Friday and scheduled my Shipt order to arrive Saturday. I really would like Sunday, but they do not deliver on Sundays. I like the delivery service because I order what I specifically need to complete each meal. Nothing more. Forget about it.. you send Spencer to the store, we have the entire snack aisle. LOL. Come Sunday, I am ready to prep. This weeks menu included:

  • Plain Oatmeal for the Week. I reheat it, adding different toppings. Yesterday I had berries with almonds and honey. Today I had banana a PB2 chocolate. I received a bunch of suggestions through my Instagram story, so I can't wait to give the options a try.

  • Chicken Stir Fry: I created 4 meals. We ate one each and froze 2. You never know when you will need that last minute meal. Especially on travel weekends. When we return Sunday night, we are always looking for something. This meal included onions, peppers and a frozen stir fry veggie pack. I cooked it all up with soy sauce and sesame oil. In place of rice, I finely chopped cauliflower.

  • Chicken Thighs: I created 3 meals that we have already eaten. They included brussel sprouts and quinoa with brown rice. I have one chicken thigh left to have on hand for a salad.

  • Last night we had chic pea pasta and broccoli with a garlic oil

  • I chopped veggies to prepare for Taco night tonight and lentil chili tomorrow. Having a lot of that done upfront makes for such an easy dinner mid week.

  • I also created little salads to include in Spencer's lunch bag.

Having a lot of the work done, makes cooking a lot less of a chore for me. I think the reason I don't like to cook is because I would eat everything so super plain. Spencer isn't like that. So he has to suck it up at dinner time, and choke down what weird dish I'm serving up. He is a good sport, but this is another reason the Factor meals will be great. I am glad we took a break from them for a while, but I am also glad to be bringing it back.
